Freshly harvested coffee cherries are frozen immediately after picking, typically at around –18°C to –40°C, without pulping or drying first. They are kept frozen for weeks or months, and then processed later. The idea is to preserve the sugars and volatile aromatic compounds at peak ripeness, and extend fermentation control.
